My first time ever (its not what your thinking) doing a blog!
What am I thinking?
All I can say is I managed to get supper on the table in 35 minutes this evening...
Chicken Rice Soup...I can honestly say I did not(do not) feel like making dumplings
and thank goodness for me having minced onion,carrot & celery in the freezer all
ready to go for just such an occasion...
No rocket science here I boiled 2 chicken breasts added salt, pepper,garlic powered and and palm full of parsley flakes(because I had some) to 2 quarts water(32 oz. in 1 quart) brought to a boil turned down to 3 (I consider that simmer on my stove) for 30 minutes. At the same time I started cooking the rice, 1 cup rice ,salt, butter 2 cups water bring to boil simmer covered for 15 minutes. Shredded chicken threw in my package of carrots,celery, onion (They were minced) I used what I had from my freezer added a can of mushrooms, added 2 tsps. chicken granules.Back into the water I cooked my chicken in...Supper was served...
